Our take brings in a little Cajun flair for the seasoning and layers flavor at every step. From the Cajun Dry Spice rub to the final pass of grated blue cheese over hot wings.

One small trick here is the addition of baking soda to the dry seasoning mix. While it’s not enough to make the wings noticeably crispier, it helps tenderize the chicken as it roasts, giving you juicier, more flavorful bites. The baking soda lightly alters the chicken’s surface texture, encouraging better seasoning absorption and a more consistent roast.

Main Ingredients

chicken wings – Wings are the star of the show, offering a great balance of skin, meat, and bone that makes them ideal for roasting or grilling. Look for whole wings or pre-separated flats and drumettes. Organic or air-chilled varieties tend to deliver better flavor and texture.

Cajun Dry Spice – This house-made blend brings bold heat, savory backbone, and a touch of herbaceousness. It typically includes paprika, cayenne, garlic powder, onion powder, and thyme. You can substitute with a good store-bought Cajun or Creole seasoning, but homemade allows you to better control salt and spice levels.

baking soda – A small amount of baking soda is used in the dry seasoning to help tenderize the chicken during roasting. It slightly alters the pH on the chicken’s surface, encouraging a more even cook and juicier bites. 

neutral oil – Just enough oil is added to help the seasoning coat the wings evenly and to promote even browning during roasting. Choose a high smoke point oil like avocado oil.

blue cheese – A block of blue cheese is frozen and microplaned over the hot wings after tossing in sauce. This technique adds a creamy, salty finish that melts slightly over the wings, amplifying their flavor without overpowering them.

chives – Fresh chives add a subtle onion flavor and a burst of color, balancing the richness of the wings and sauce.

mayo, buttermilk, vinegar, and spices – These make up the base of the Homemade Blue Cheese Dressing. The mayo provides richness, the buttermilk lightens it up, and the vinegar and mustard powder sharpen the flavor. Onion and garlic powder add savory depth, and black pepper keeps it lively.

Ingredients

  • for the wings
  • 2 1/2 pounds chicken wings

  • 2 tbsp Cajun Dry Spice
    or a store bought cajun seasoning

  • 1 tsp baking soda

  • 2 tsp neutral oil

  • Homemade Buffalo Wing Sauce
    or your favorite wing sauce, as needed

  • 2 ounces blue cheese block, frozen

  • 2 tbsp chives, finely chopped for garnish

  • 1 1/2 cups mayonnaise

  • 1/4 cup buttermilk

  • 1/8 tsp black pepper

  • 1/4 tsp apple cider vinegar

  • 1/2 tsp Colman’s mustard powder

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/3 cup blue cheese,
    crumbled or grated through the
    large holes of a grater – 2 ½ ounces

Method

  • Prep the blue cheese topping and blue cheese dressing
  • Freeze the Blue Cheese: Place the blue cheese block in the freezer for at least 60 minutes. This allows it to firm up enough to be microplaned over the hot wings later. It can be frozen solid ahead of time and stored until needed.
  • Make the Buttermilk Blue Cheese Dressing: In a medium bowl, whisk together the mayo, buttermilk, black pepper, apple cider vinegar, Colman’s mustard powder, onion powder, and garlic powder until smooth. Fold in the blue cheese, crumbled or grated through the large holes of a grater. Chill until ready to serve. This dressing can be made up to 3 days in advance and actually improves with a bit of time to meld.
  • Oven Method
  • Prep the Wings: Line a baking sheet with foil and place a wire rack on top or you can use an air fryer basket. In a large bowl, toss the chicken wings with Cajun Dry Spice and baking soda until evenly coated. Add the neutral oil and toss again to coat thoroughly. Let the wings rest for 20 minutes at room temperature. Preheat your oven to 415°F.A pan of seasoned chicken wings about to be roasted.
  • Roast the Wings: Arrange wings skin-side up on the prepared rack. Roast for 12 minutes, then flip each wing. Continue roasting for another 10 to 12 minutes, or until the skin is deeply golden and crisp and the internal temperature reaches 165°F.A pan of roasted chicken wings.
  • Grill Method
  • Set Up the Grill: Build a two-zone fire with a medium-high direct heat side and a cooler indirect zone. You want strong heat (about 400–425°F) on the medium-high direct heat side of the grill. Clean and oil the grates.
  • Grill the Wings: Toss the wings with the same Cajun Dry Spice, baking soda, and neutral oil as above. Let them rest for 20 minutes at room temp. Place wings over the indirect heat side of the grill, cover the grill, and cook for 12–14 minutes, flipping halfway through. Finish them over the medium-high direct heat side of the grill for 1–2 minutes per side to get extra color and char. Check that the internal temp hits 165°F.
  • Final Steps & Serving
  • Final Steps & Serving: Transfer hot wings to a large bowl. Toss immediately with the warm Homemade Buffalo Wing Sauce, using tongs to coat each piece evenly. Arrange on a serving platter and use a microplane to grate the frozen blue cheese generously over the top. Sprinkle with chopped chives for a fresh finish.
