We build on the classic banana muffin by adding warm spices and a brown sugar walnut crumb. This version is bold enough for fall mornings with coffee, yet light enough for a summer brunch. The ground ginger cuts through the sweetness just enough, while the crumb topping gives it that crisp edge that balances the soft interior.

What sets this version apart is how the bananas are handled: mashed but not puréed, to maintain a bit of texture. The crumb topping brings in steel-cut oats and chopped walnuts for a rustic bite that plays against the plush interior. These muffins freeze well and reheat beautifully, making them ideal for prep-ahead breakfasts or snacks.

Serve them slightly warm with salted butter, or slice one open and spoon over a dollop of whipped mascarpone. They pair especially well with coffee, black tea, or even a spicy chai. With their tender crumb, toasty topping, and warm spice profile, these muffins offer a satisfying upgrade to your usual banana bread routine.

Main Ingredients

Bananas – Ripe bananas are the star here, adding moisture, sweetness, and structure to the muffins. The more speckled the peel, the better. Avoid overly fibrous or green bananas. You want them mashed but not fully smooth, to retain a bit of texture in the final muffin.

Brown sugar – Brown sugar gives the muffins their rich flavor and moist crumb. Its molasses content complements the banana and spice without overpowering it. Light or dark brown sugar both work, depending on how deep you want the flavor to go.

Ground ginger – This spice adds gentle heat and aromatic lift, keeping the muffins from leaning too sweet. Fresh ginger can be too sharp here, so stick with ground for a more balanced spice throughout the batter.

Walnuts – These bring a toasty, buttery crunch that pairs naturally with banana. Use fresh, untoasted walnuts and give them a rough chop so you get uneven pieces for varied texture. Pecans are a good substitute if preferred.

Salted Butter – Used in both the batter and crumb topping, butter brings moisture, flavor, and structure. Make sure it’s softened so it creams properly with the sugar.
