Baby back ribs: are prized for their tenderness and meatiness. When selecting ribs, look for racks with even marbling and a good layer of meat on top. Avoid those with excessive fat or exposed bones.

Ingredients

  • 2 racks loin back ribs (baby back ribs)

  • salt and pepper (to taste)

  • 28 bay leaves

  • olive oil to rub

  • Old Bay BBQ Sauce

Method

  • Preheat your oven to 275°F.
  • Peel the membrane off of the inside of the rack and discard.
  • Season the ribs generously with salt and pepper on both sides.
  • Lay 7 bay leaves on the inside of each rack and 7 on the outside, ensuring even coverage.
  • Wrap the ribs tightly in plastic wrap or aluminum foil.
  • Place the ribs bone side down on a baking sheet and bake for 1 hour.
  • After 1 hour, flip the ribs so they are bone side up and continue to bake for an additional 1 1/2 hours.
  • Once done, remove the ribs from the oven and let them rest. These can be prepped ahead of time and refrigerated until ready to grill.
  • Once the ribs are cooled, cut them into two bone sections. When ready to serve, rub the meat side of the ribs with a little olive oil. Grill the ribs for about 2 minutes, meat side down.BBQribsFFG 1
  • Turn them over and brush the meat side generously with Old Bay BBQ Sauce and cook them bone side down until the sauce glazes up a bit, about 3 minutes.BBQribsFFG 3

Field Notes

  • Use a paper towel to grab hold of the membrane to get a better grip while peeling.
  • Wait until the ribs are chilled to portion them.
