Homemade Buffalo Wing Sauce


Wings are one of those foods that bring people together. Whether it’s a tailgate, a family cookout, or just a random Tuesday night craving, a good wing sauce is what transforms a tray of fried or grilled wings into something unforgettable.

This wing sauce balances tang, heat, sweetness, and a buttery finish, creating a deeply craveable glaze that clings to each bite.

This sauce is super simple as it doesn’t require special tools or techniques, just a saucepan and some stirring.

It works for game day, yes, but also for weeknight dinners. Drizzle it over roasted cauliflower, toss it with chicken thighs, or brush it on grilled shrimp. This is also the same wing sauce we use in our Buffalo Chicken Dip, where it brings just the right balance of heat and sweet to pull the whole dish together. It’s flexible and bold.

What makes this version unique is the layered heat. The mild vinegar-forward hot sauce sets the base, but Sriracha adds body and umami, while gochugaru brings a dry, smoky roundness that lingers. Honey and brown sugar smooth out the spice with just enough sweetness, and a final swirl of butter pulls it all together with a glossy finish. It’s not just spicy… it’s got dimension.

It’s a go-to wing sauce that blends Louisiana hot sauce tradition with Southeast Asian chili depth and a sweet-savory backbone. This homemade wing sauce is spicy, sticky, and buttery, and it’s exactly what you want on your next batch of wings.

Main Ingredients

Crystal hot sauce – This Louisiana-style hot sauce is the backbone of the recipe. It’s more vinegar-forward and slightly milder than other options like Frank’s, which gives the sauce a tangy sharpness without overpowering heat. Look for Crystal or similar southern-style hot sauces with a thinner consistency and fermented depth.

Garlic – Just one grated clove adds a subtle pungency that blooms in the butter and complements the sweetness and acidity of the sauce. Grating it ensures even distribution and avoids biting into raw chunks. 

Apple cider vinegar – Adds brightness and a touch of fruitiness. It sharpens the sauce’s profile and brings balance to the sweet and spicy elements. If you’re out, white vinegar will do, but cider vinegar gives a rounder, more complex edge.

Sriracha – A thicker, fermented chili sauce that builds body and adds a richer heat. It bridges the gap between the sharp vinegar of Crystal and the mellow sweetness of the honey and sugar. You can swap in sambal oelek for a looser, chunkier texture.

Honey – Honey brings floral sweetness and helps the sauce cling to the wings. It adds a nice sheen and balances the vinegar and chili notes. 

Brown sugar – Deepens the sweetness with molasses undertones and gives the sauce more viscosity. 

Gochugaru – Korean chili flakes that provide a slow-building, smoky warmth. They’re not as sharp as cayenne, which makes them great for layering flavor. You can find them in Asian markets or substitute smoked paprika for a milder version.

Salt – Just a pinch helps balance all the flavors. Since the sauces are already salty, you don’t need much—just enough to round things out.

Salted Butter – This is the secret to a silky, emulsified finish. It tames the heat, amplifies the richness, and gives the sauce its signature Buffalo-style texture.

Ingredients

  • 1 1/4 cup crystal hot sauce – 1 ¼ cup

  • 1 garlic clove, grated

  • 2 tsp apple cider vinegar

  • 4 tbsp sriracha

  • 4 tbsp honey

  • 5 tbsp brown sugar

  • 1/2 tsp gochugaru

  • salt, a pinch

  • 6 tbsp salted butter

Method

  • Prep the Sauce Base: In a medium saucepan, combine the hot sauce, garlic, vinegar, sriracha, honey, brown sugar, and gochugaru. Stir well to combine, making sure the sugar dissolves evenly.
  • Simmer and Blend: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir frequently, and cook until the sauce slightly thickens and starts to look glossy, about 7–8 minutes. You should smell a mix of sweet chili and sharp vinegar. Remove from heat.
  • Finish with Butter: Off the heat, add the butter, one tablespoon at a time, whisking continuously until fully melted and the sauce is smooth. Field Notes

  • Let the sauce cool slightly before using, or transfer to a jar and refrigerate. Warm gently before serving to re-emulsify if it separates.
