This beef bowl is what happens when quick cooking meets bold flavor. It’s about balance: rich, salty, spicy, and a little sharp around the edges.

Here, ground beef gets cooked hot and hard until it starts to crisp, then glazed in soy, brown sugar, garlic, ginger, and gochujang. The sauce clings to the beef, coating it in that deep, sticky heat that makes you go back for seconds.

The rice underneath isn’t anything fancy, just seasoned enough to hold its own. It’s warm, clean, and gives the beef somewhere to land. Main Ingredients

Ground beef: I prefer 80/20 ratio. Browned hot and fast, it builds the deep flavor that carries the bowl. The caramelization adds texture and sweetness before the sauce hits the pan.

Gochujang: A Korean chili paste that gives the beef its body and heat. The fermentation brings natural umami, while the spice rounds out with sweetness from brown sugar.

Rice: Lightly seasoned with rice vinegar and salt. Simple and clean, it’s a neutral base that balances the sauce and spice.

Smashed cucumber kimchi: A quick pickle made by lightly crushing cucumbers so they absorb the seasoning. Tossed with fish sauce, vinegar, sugar, and gochugaru, it’s spicy, salty, and sharp — exactly what this bowl needs to stay balanced.

Garnish: Sliced scallions and toasted sesame seeds add freshness and texture.

Ingredients

  • for the beef
  • 1 lb ground beef

  • 3 tbsp soy sauce

  • 1 1/2 tbsp brown sugar

  • 1 tsp sesame oil

  • 3 garlic cloves, minced

  • 1 tbsp grated ginger

  • 1 1/2 tbsp gochujang

  • 2 tsp neutral oil

  • for the rice
  • 1 cup jasmine rice

  • 1 1/2 cups water

  • 2 tsp rice wine vinegar

  • 1/2 tsp salt

  • for the smashed cucumber kimchi
  • 2 cups cucumber (Persian or English), peeled, seeded, lightly smashed, and cut into rough ½-inch chunks

  • 2 tbsp fish sauce

  • 1/2 tsp salt

  • 2 tsp sugar

  • 1 tsp rice vinegar

  • 1 tsp gochugaru (Korean chili flakes)

  • for the topping
  • sliced scallions

  • toasted sesame seeds

Method

  • Rinse and Start Cooking the Rice: Rinse the rice under cold water until the water runs clear. Combine with 1 ½ cups water in a medium pot. Bring to a boil, cover, and reduce to a simmer. Cook for 11 minutes.
  • Making the smashed cucumber kimchi: Peel and cut the cucumber in half lengthwise. Seed the cucumbers by scraping the seeds out with a spoon. Lay them seeded side down and smash the top of them lightly with the back of a knife (the dull side), then cut into rough ½-inch pieces. Combine the cucumbers with fish sauce, salt, sugar, rice vinegar, and gochugaru. Toss well and let sit 10–15 minutes to develop flavor.Quick cucumber kimchi
  • Steam the Rice: Once the rice has simmered for 11 minutes, turn off the heat and leave the lid on to let it steam for another 11 minutes.
  • Prepping the sauce: In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang for the beef glaze.Gochujang sauce
  • Cooking the beef: Heat neutral oil in a skillet over medium-high heat. Add the ground beef and let it sear undisturbed for about a minute before breaking it up. Cook until browned and crisp around the edges, 6–7 minutes total. Pour in the glaze and stir until the beef is coated and glossy, about 2–3 minutes.
  • Seasoning your rice: Fold in rice vinegar and salt until evenly mixed. Keep covered until serving.Seasoned rice topped with sesame seeds
  • Assembling the bowls: Spoon seasoned rice into bowls. Top with glazed beef and a generous scoop of smashed cucumber kimchi. Finish with scallions and sesame seeds.   • Storage & Reheating: Store beef and rice separately in airtight containers for up to 3 days. Reheat the beef gently in a skillet with a splash of water or soy sauce. The cucumber kimchi will keep its crunch for about 2-3 days.
