These cookies are simple yet packed with flavor, making them an excellent choice for both casual baking and special occasions.

This recipe stays true to tradition but refines the technique for the best possible texture. Cream of tartar is essential, giving snickerdoodles their signature tang and soft bite. Unlike a basic sugar cookie, the cinnamon-sugar coating creates a slightly crisp exterior that contrasts perfectly with the tender interior.

These cookies are excellent on their own but also pair well with coffee, hot chocolate, or even a scoop of vanilla ice cream. They’re easy to adapt with additional spices, alternative flours, or a hint of brown butter for added depth. Whether you’re baking for a holiday gathering or simply craving a sweet treat, this snickerdoodle recipe guarantees soft, flavorful cookies every time.

butter –  Butter provides richness and tenderness to these cookies, ensuring a soft and chewy texture.

sugar – The foundation of sweetness and structure. Granulated sugar helps create the crisp edges, while blending with the butter for proper creaming.

cream of tartar – A key ingredient that gives snickerdoodles their slight tang and prevents the sugar from crystallizing, keeping the cookies soft.

cinnamon – The defining spice of snickerdoodles. Its warmth enhances the sugar coating, providing a fragrant, slightly spicy kick that sets these cookies apart from basic sugar cookies.

Ingredients

  • For the Cookies
  • 3/4 cup salted butter

  • 1 1/2 cups sugar

  • 1 1/2 tsp vanilla extract

  • 2 eggs

  • 2 1/2 cups ap flour

  • 1/2 tsp baking soda

  • 1 1/2 tsp cream of tartar

  • For the Topping
  • 2 tbsp cinnamon

  • 4 tbsp sugar

Method

  • Prepping the dough: Start by preheating the oven to 405°F. Line a baking sheet with parchment paper. In a mixing bowl, cream the butter and sugar together until light and fluffy. This process incorporates air, resulting in softer cookies. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  • Mixing the dry ingredients In a separate bowl, whisk together the flour, baking soda, and cream of tartar. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing, as this can lead to tough cookies.SnickerdoodleFFG 4
  • Rolling and coating: In a small bowl, combine the cinnamon and sugar for the coating. Scoop dough into 1 ½ ounce balls (roughly 2 tablespoons each),, rolling each in the cinnamon-sugar mixture until fully coated. Place them on the prepared baking sheet, leaving space between each for spreading. With a glass gently press the cookies to create the cracked cinnamon tops.
  • Baking the cookies: Bake in the preheated oven for 7–8 minutes or until the edges are set but the centers remain soft. The cookies will continue to firm up as they cool. Remove from the oven and let them rest on the baking sheet for 2 minutes before transferring to a wire rack.SnickerdoodleFFG 8

Field Notes

  • Store in an airtight container at room temperature for up to 5 days. To maintain softness, add a slice of bread to the container.
  • These snickerdoodles pair wonderfully with coffee, tea, or warm apple cider. For a seasonal twist, try adding a pinch of nutmeg or cardamom to the dough. If you prefer a slightly crispier texture, extend the bake time by one minute.
  • Baking is all about finding the perfect balance of flavor and texture. If you make this recipe, let us know how it turns out and share any creative variations you try!
