Easy Garlic Breadcrumbs


Garlic breadcrumbs are an easy way to add crunch and flavor to just about anything. While store-bought breadcrumbs get the job done, making them from scratch with infused garlic oil takes things to another level. The result is a golden, fragrant topping that enhances every bite.

Italian cooks use toasted breadcrumbs as a topping for pasta, while French cuisine incorporates them into gratins and stuffing. This homemade version fits seamlessly into modern kitchens, providing a chef-level finish to everyday dishes.

What makes this recipe unique is that it starts with our Garlic Croutons. Instead of simply drying out bread, you get a deep, roasted garlic flavor in every crumb. This method ensures even distribution of oil and seasoning, creating an irresistibly crispy texture. The breadcrumbs can be fine or coarse, depending on your preference, making them a flexible addition to your pantry.

Main Ingredients

French bread – A sturdy bread with a crisp crust and airy interior creates light yet crispy crumbs. Day-old or slightly stale bread works best since it absorbs oil without getting soggy. Avoid overly soft breads like sandwich loaves, as they can turn mushy.

Garlic – Freshly minced garlic infuses the oil with robust, savory depth. Cooking it gently before adding the bread ensures a mellow sweetness instead of harsh raw garlic notes. 

Olive oil – This binds the seasoning to the bread while adding richness and a slight fruitiness. Extra virgin olive oil provides the best flavor, but light olive oil can be used for a more neutral taste. Avocado oil is a good substitute if preferred.

Salt – Enhances the natural flavors and brings out the nuttiness of toasted bread. Kosher salt is preferred for even seasoning, but sea salt or table salt can work with slight adjustments.

Pepper – Adds a mild heat that balances the richness of the oil and garlic. Freshly ground black pepper is best for a more pronounced flavor.

Ingredients

  • 6 cups french bread, medium diced

  • 2 tbsp garlic, minced

  • 1/2 cup olive oil

  • 1/2 tsp salt

  • pepper, to taste

Method

  • Prepping the Ingredients Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Dice the French bread into medium-sized cubes for even toasting. Mince the garlic finely to ensure it infuses the oil efficiently.
  • Infusing the Garlic Oil Heat olive oil in a pan over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Stir frequently and avoid browning at this stage to prevent bitterness.GarlicCroutonsFFG 1 1
  • Coating the Bread Add the diced bread to the pan and toss to coat evenly in the garlic oil. Stir constantly for 2-3 minutes, allowing the garlic to lightly brown while the bread absorbs the infused oil.GarlicCroutonsFFG 2 1
  • Baking the Croutons Transfer the coated bread cubes to the prepared baking sheet, spreading them out in an even layer. Season with salt and pepper. Bake for 10-15 minutes, stirring halfway through, until golden and crispy.
  • Cooling and Blending Let the croutons cool completely before processing. Once cooled, pulse them in a food processor until the desired crumb size is achieved. For a fine texture, process longer; for a coarser texture, pulse in short bursts.GarlicCroutonsFFG 4 1FFGBreadcrumbs 1

Field Notes

  • Store in an airtight container at room temperature for up to two weeks. For longer storage, freeze the breadcrumbs in a sealed bag for up to three months. To refresh, toast in a dry pan over medium heat for a minute or two.
