Ingredients

  • 3/4 cup salted butter, softened

  • 1/2 cup sugar

  • 1 cup brown sugar

  • 2 eggs

  • 1 1/2 tsp vanilla extract

  • 1 1/2 cup peanut butter

  • 2 1/2 cup flour

  • 1/2 tsp baking soda

  • 3/4 tsp salt

Method

  • Preheat the Oven: Set the oven to 405°F and line a baking sheet with parchment paper.
  • Cream the Butter and Sugars: In a large bowl, beat the softened butter, sugar, and brown sugar together until light and fluffy, about 2 minutes.
  • Add the Wet Ingredients: Mix in the vanilla extract and eggs one at a time, ensuring they are fully incorporated before adding the next.
  • Incorporate the Peanut Butter: Stir in the peanut butter until smooth and well combined.

  • Form the Cookies: Scoop dough into 1 ½ ounce balls (roughly 2 tablespoons each), roll them into balls, and place them on the prepared baking sheet. Use a fork to press down gently, creating a crisscross pattern.
