Pistachio Semifreddo with Rosemary Shortbread Crumble
We served this Italian Semifreddo at a summer wine dinner outside, and it was the perfect way to end the night.

The sun had just dipped low, wine glasses were half full, and one of our favorite desserts was served. It’s everything a semifreddo should be: creamy, airy, and richly flavored with toasted pistachios.
The texture hits that sweet spot between mousse and ice cream, and if you heat the knife with hot water before slicing, it releases like a dream. The garnish, chopped pistachios and crushed rosemary shortbread, adds crunch and contrast. That hint of rosemary brings an herbal warmth that plays especially well with dessert wine or a chilled amaro. It’s refined, but not fussy. Familiar, but not predictable.

This pistachio frozen mousse doesn’t rely on gimmicks or shortcuts. Just a well-built custard base folded with cream and flavor that holds its own. If you’re planning a dinner party, this is the kind of dessert that buys you time. It lives in the freezer, slices beautifully, and finishes the meal in a way that feels intentional without being over the top.

Main Ingredients
toasted pistachios: These bring the backbone of the flavor—nutty, rich, and slightly sweet. Toasting them intensifies the flavor and gives a warm depth that raw pistachios can’t deliver. Use unsalted shelled pistachios for best results, and pulse them until you get a coarse meal.

eggs: Yolks make the base smooth and custardy, while the whites get whipped into a glossy meringue for lightness and structure. This dual use of the egg makes semifreddo what it is—plush and never icy.
sugar: Divided between the yolks and whites, sugar balances richness and helps the meringue hold its volume. It’s just enough to sweeten without overwhelming the pistachio.
pistachio extract: A small but essential addition. It reinforces the natural flavor of the nuts and brings the whole dessert into focus. Look for pure pistachio extract, not artificial blends.
heavy cream: Whipped to soft peaks and folded in last, the cream brings richness and smooth mouthfeel. It’s what gives the semifreddo its body without the need for a churned base.
kosher salt: Just enough to sharpen the sweet and nutty notes. A necessary touch for balance.
