Cowboy Caviar


Hailing from the heart of Texas, cowboy caviar is a beloved game day and summer gathering favorite that has won hearts across the country with its bright flavors and versatility.

Despite what some might think, traditional Cowboy Caviar isn’t a mix of corn and beans but rather a combination of corn and Black-Eyed Peas. This southern staple showcases simple ingredients that come together to create a dish that’s both hearty and refreshing. Black-Eyed Peas, often associated with good luck and prosperity in Southern cuisine, are the star of this dish. They blend beautifully with the sweetness of corn, creating a contrast that’s both satisfying and flavorful. Cowboy Caviar isn’t just a dip, it’s a flavorful topping for Pulled Pork Nachos, tacos, grilled meats, or even spooned over rice bowls for a fresh, Southwestern-inspired finish. It’s a great way to use Black-Eyed Peas in a way that’s both delicious and crowd-pleasing.

If you prefer a more traditional taste, Italian vinaigrette works wonderfully as a substitute. Both options bring a tangy zest that complements the fresh vegetables and beans perfectly.


Main Ingredients:

Corn: Use fresh raw corn cut off the cob.  This will give a great crunch to the end result.

Black-Eyed Peas: Drained and rinse them if using canned to tone down the salt and “canned” flavor. If using home cooked Black-Eyed Peas, drain them well, but don’t rinse.

Tomatoes: I prefer sweeter tomatoes for this dish and usually go for cherry or grape tomatoes. 

Dressing: Opt for our Everything Bagel Vinaigrette or substitute an Italian Dressing.

Ingredients

  • 1 ear corn (about 1 ½ cups of kernels)

  • 1 1/2 cups Black-Eyed Peas
    (or 1 can drained and rinsed)

  • 1/2 cup tomatoes, diced

  • 1/4 cup fresh cilantro, chopped

  • 1 tbsp lime juice

  • 1/4 cup red bell pepper, finely diced

  • 1/4 cup red onion, finely diced

  • 3 tbsp Everything Bagel Vinaigrette
    (or Italian dressing)

  • 1/2 tsp salt (or to taste)

Method

  • Mix the Ingredients: In a large bowl, combine the freshly cut corn kernels, black-eyed peas (you can use canned or cooked dried peas), diced tomatoes, chopped cilantro, diced bell pepper, and finely chopped red onion. Gently toss the ingredients together to mix them evenly.

  • Dress the Salad: Drizzle the salad with freshly squeezed lime juice and Everything Bagel Vinaigrette.
  • Season and Serve: Season the salad with salt to taste and toss everything together once again to ensure the flavors are well distributed. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes to let the flavors meld together before serving.
